Each batch size of Chattanooga Whiskey 91 consists of 8-12 barrels in total. ![]() For the Solera finishing, the company brings together almost 100 barrels into a 4,000-gallon, charred, white oak Solera finishing barrel, which never goes empty. The bourbon is aged for at least 2 years in two different charred and toasted white oak barrels before undergoing a Solera finishing process. Chattanooga Whiskey 91 is a four grain straight bourbon consisting of corn and three distinct malts, which the company labels a Tennessee High Malt whiskey. The company states that the signature recipe - known as “Barrel 91” - for Chattanooga Whiskey 91 was selected by Head Distiller Grant McCracken from the first 100 experimental barrels created at the Chattanooga Whiskey Experimental Distillery. In 2019, the distillery produced two new signature expressions, Chattanooga Whiskey 91 and Chattanooga Whiskey CASK 111. ![]() It is a fascinating tour led by knowledgeable and talented guides.In 2011, Chattanooga Whiskey became the first legal distillery in Chattanooga in over 100 years. I’m short, I would definitely recommend this tour to anybody visiting the Chattanooga area as well as for those living in and around the city. Both Jamie and Catherine were stellar and a huge reason why we enjoyed the tour so much. This young man was very knowledgeable, personable and continued the “tour” while we tasted with some very interesting insight about all of the scents, flavors and textures of their wonderful whiskey. To do this, we had an excellent “flight attendant”, Jamie. Aside from the whiskey being excellent in and of itself, having the tasting at the end was a great way to recap all that we had learned and apply it practically to the whiskey itself. At the conclusion of the tour, we were treated to a very generous tasting of all of the whiskey that we had just learned about. The tour itself was just the right blend of history, science and methodology and lasted about 30-40 minutes or so. She was also very patient and helpful with our questions. Situated off the grid in Vermont, our whiskey is meticulously crafted by a new generation of distillers and blenders who reimagine and unlock the essence of Rye Whiskey. Catherine was genuinely excited and knowledgeable and really made the tour fun. That said, we were treated with a personal tour by a fabulous guide, Catherine. My daughter bought me a tour of the Chattanooga Whiskey Experimental Distillery for my birthday and we visited on February 19th while COVID restrictions were still in place. I recommend it if you have any sort of interest in the history, making, and tasting of whiskey or alcohol in general. We are very glad we decided to stop by and do this tour, and we consider it one of the best experiences we had while visiting Chattanooga. I was surprised by the range of aromas and flavors in the flight, and I found myself really enjoying most of the whiskeys even though I never considered myself much of a liquor person. Kate explained the whiskeys to us, and gave a helpful tutorial on how to get the most out of the tasting experience. ![]() The tasting was predictably the highlight of the whole thing. The whole thing was interesting and I have a greater respect for the craft of distilling after the tour. Unlike 91 however, Cask 111 is not Solera aged. Chattanooga Whiskey 111 Cask is the unfiltered, barrel strength expression of Chattanooga Whiskey’s signature high malt bourbon, Chattanooga Whiskey 91. We then had the chance to tour the areas where experimental batches are distilled and kept in barrels. Our tour guide, Britt, gave a thorough rundown of the interesting history of whiskey in Chattanooga. We have very little whiskey experience but we’re excited to learn about the craft, and this experience did not disappoint. ![]() Tours are about $15 per person, and they come with a tasting flight. Note that the tour sizes are small right now (6 people) and walk ins are accepted, but you can reserve by phone. My wife and I attended an afternoon tour on a whim.
